AGUA CHILES WITH ORCHESTRA PROVISIONS CHILI LIME SALT & TOGARASHI
½ LB WHOLE BLUE PRAWNS 21/25 OR 26/30, RAW
1 CUCUMBER
1 ½ C FRESH LIME JUICE
½ BUNCH CILANTRO
2 SERRANO CHILIS
1 GARLIC CLOVE
½ TSP CORIANDER
2 TSP SEA SALT
Blend all ingredients (except shrimp) together for 2 minutes and strain through a fine strainer. Add raw shrimp and let soak for 5 minutes covered in refrigerator. Serve immediately with garnish. Can also substitute shrimp with thinly sliced catch of the day fish.
GARNISH
Thinly sliced red onion (first soak in water for 5 minutes)
Cilantro sprigs
Thinly sliced avocado, seeded and peeled cucumber, apple, and/or jicama Sprinkle with Orchestra Provisions Chili Lime Salt & Orchestra Provisions Togarashi seasoning
